First available in 1995, the Tofurkey roast is a remarkably tasty and nutritious turkey alternative for those who choose a vegetarian or vegan lifestyle. Tofurkey is renowned for its ease of preparation and turkey-like texture and flavor. Ingredient List:
- 1 Tofurkey roast (in the grocer’s vegetarian frozen section)
- 2 large carrots, peeled and quartered
- 1 onion, peeled and quartered
- 1 Tablespoon soy sauce
- 1 1/2 teaspoons ground sage
Preheat oven to 350 F
Make the baste:
- Whisk together soy sauce and sage, then set aside
Prepare the roast:
- Remove roast from packaging & set gravy aside to thaw
- Place the roast in a casserole dish (dish must have a tight fitting cover)
- Place carrots and onions around the roast (celery may also be used, if you wish)
- Whisk baste again and them pour half over the roast
- Cover tightly to keep steam in
Cooking Instructions:
- Cook at 350 F for 1 hour and 15 minutes
- Remove from the oven, uncover the casserole and baste with remaining half of baste mixture
- Return to the oven and cook for an additional 10-12 minutes
Gravy preparation:
- Pour thawed gravy into a small saucepan
- Whisk over low/medium heat until simmering
- Water may be added to create a thinner, smoother gravy
