Nothing says “comfort food” like a warm bowl of chicken soup. Here is a wonderful meat-free vegan alternative to traditional chicken soup that not only satisfies your craving for a childhood favorite, but is a healthier and more compassionate alternative to tradition.
Ingredient List:
- “UnBreast of Chicken” by Now and Zen – cut into small bites
- 32 ounces of vegetable broth (“No Chicken Broth” by Imagine Foods is recommended, but any vegetarian/vegan vegetable broth will do)
- Kale or spinach
- Carrots – cubed or diced
- Firm tofu – cubed or diced
- 2 Tablespoons (or to taste) of Bragg Liquid Aminos
- Quick brown rice (Arrowhead Mills brand is recommended; vegetarian/vegan noodles may be substituted for rice)
- Butter substitute – for rice (Earth Balance brand is recommended)
- Sea salt
- Vegan bread with Earth Balance butter substitute (optional)
Preparation Instructions:
- Prepare rice (or noodles) using butter substitute and sea salt – set aside
- Steam kale or spinach and carrots – set aside
- Dice tofu
- Cut “Unbreast of Chicken” into bite sized pieces (it is precooked)
- Bring vegetable broth to a simmer
- Add greens, unchecked, rice (or noodles), tofu and Bragg Liquid Aminos
- Simmer for 15 minutes
