Nothing hits the spot quite like a helping of creamy and delicious mashed potatoes. Linda’s vegan recipe is sure to please even the most diehard mashed potato connoisseur. In fact, if you don’t tell anyone, no one will know the difference. Really. They’re THAT good!
Ingredient List:
- Potatoes (1-2 per serving, depending on size of potato)
- Butter substitute (Earth Balance brand is recommended)
- Sea Salt
- SILK non-dairy creamer – PLAIN (very important that it’s plain)
Preparation Instructions:
- Wash & peel potatoes (leave a bit of skin for color)
- Dice potatoes into large cubes and immediately immerse completely in a pot of salted water (they will oxidize if allowed to sit out too long after dicing)
- Boil potatoes for 15-20 minutes
- Drain potatoes and place in a large mixing bowl
- Add Silk – 1/2 to 1 Tablespoon per potato (more or less based on desired consistency…you can ALWAYS add more as you go, so be careful not to use too much to begin with)
- Begin mashing
- Add butter substitute, salt and pepper to taste
- Fluff with a fork and serve
